CONFIT DE PATO MARTIKO CON SALSA PEDRO XIMÉNEZ Y PURÉ DE PATATAS Y MANZANAS
INGREDIENTES
• 4 confits de pato Martiko.
• 6 patatas.
• 4 manzanas de la variedad que prefieras (con golden gala queda genial).
• 200 ml de vino Pedro Ximénez.
• 2 cucharadas de azúcar moreno.
• 4 cucharadas soperas de pasas.
• Aceite de oliva virgen extra Artajo
• Sal.
ELABORACIÓN
1. Comenzamos preparando la reducción de Pedro Ximénez, para que se vaya haciendo lentamente mientras preparamos el resto del plato. En un cazo, ponemos el vino Pedro Ximénez y el azúcar moreno, y a fuego bajito dejamos que se vaya reduciendo y espesando poco a poco, en unos 20 minutos estará lista. Removemos un poco el cazo de vez en cuando para conseguir que el azúcar se disuelva por completo, vigilando que no espese demasiado.
2. A continuación, llenamos vaso de agua hasta la mitad y lo introducimos en el microondas hasta que el agua hierva, aproximadamente un minuto. Sacamos el vaso del microondas y ponemos en él las pasas para que se hidraten. Precalentamos el horno a 200ºC con resistencia arriba y abajo.
3. Seguimos con la preparación del puré, peinado las patatas y las manzanas y cortándolas en trozos pequeños. Las ponemos en un recipiente apto para microondas y lo introducimos en él unos 7 minutos. Pasados estos minutos, revolvemos con una cuchara las patatas y manzanas, y volvemos a introducir en el microondas otros 7 minutos. Estarán listas cuando podamos aplastarlas con un tenedor para hacer el puré. Añadimos sal al gusto. Si lo deseas, puedes pasarlo por el pasapurés.
4. El siguiente paso es abrir la lata y colocar los confit de pato Martiko en una bandeja de horno forrada con papel de horno. Los colocamos con la piel hacia arriba y solo con un poquito de la grasa que trae la lata. Después, los introducimos en el horno a una altura por encima de la mitad, para que estén cerca de la resistencia superior y su piel se dore. Con 10 minutos será suficiente. Si quieres, puedes volver a calentar el puré ya listo en el microondas durante un minuto para servirlo bien caliente a la mesa.
5. Escurrimos las pasas y las incorporamos al cazo con la salsa Pedro Ximénez. Revolvemos todo bien.
6. Por último, repartimos el puré en el centro de los platos y ponemos encima de cada uno un confit de pato Martiko, lo regamos con la salsa Pedro Ximénez, incluyendo algunas pasas y lo servimos muy caliente. ¡Buen provecho!
