CARDO GUTARRA EN SALSA DE ALMENDRAS

INGREDIENTES

2 frascos de cardo Gutarra

2 ajos

2 cucharadas de aceite de oliva virgen extra Artajo

1 cucharada de harina

50 gr de almendra pelada

30 gr de jamón

1 vaso de caldo del cardo

1/2 vaso de vino blanco

Sal

ELABORACIÓN

1. Empezamos picando los ajos y sofriendo el aceite de oliva virgen extra Artajo en una sartén a fuego suave hasta que tomen color, pero sin llegar a tostarse. Añadimos el jamón troceamos y le damos unas vueltas.

2. Escurrimos el cardo Gutarra y reservamos el caldo. Agregamos la harina y vertemos un cucharón del caldo del cardo. Removemos para que ligue de forma homogénea.

3. Continuamos majando las almendras y añadiendo un poco del caldo de cardo Gutarra para diluirlas. Las agregamos al sofrito, mezclamos y rectificamos de sal. Añadimos el cardo, el vino blanco y cocemos 4-5 minutos hasta que se reduzca el vino para lograr el espesor dejado de la salsa.

4. Para terminar, servimos y decoramos con unas láminas de ajo frito. También podemos darle un toque crujiente añadiendo unas nueces y…¡Buen provecho!
